All our meat is supplied by R&J Yorkshire’s Finest Farmers & Butchers.
It’s a family run farm and butcher that farm in Nidderdale since the 1850’s, with an informal co-op of farmers supplying from across the Yorkshire Dales, Moors and Vales.
All the farming is based on a Low and Slow process; Grass fed or free range and using seasonal and contemporary hanging and curing techniques.
Himalayan Salt Chamber
The imported Himalayan Salt doesn’t act directly on the meat. It alters the environment taking the Dry Ageing of beef to a whole new level and intensifies the flavour of beef further.
All Salt Aged beef is selected based on its live conformation. Only beef that fits strict requirements will enter to bespoke Salt Chamber, as a result is quality, consistency, and no compromise!
