Our foraging philosophy is integral to our ethos at the Black Swan, so we’re pleased to be able to offer our guests the opportunity to step behind the scenes this summer and explore the flavours we forage in the countryside surrounding us in Oldstead.

Guided by a knowledgeable member of our team, you’ll discover the seasonal wild ingredients that shape our tasting menu at The Black Swan. This one-night foraging package includes a walking foraging tour through our kitchen garden and across the Banks family farmland, where you’ll discover the rich variety of wild food sources found in our hedgerows and woodland. From edible plants and flowers to wild fungi and lesser-known ingredients, you’ll learn to identify and gather both familiar and more unusual flavours that grow naturally in the countryside around us.

Led by seasonality and our redefined growing chapters, the experience includes an introduction to the principles and ethics of responsible foraging, ensuring minimal impact on the environment. Along the way, you’ll gain an understanding of how these wild ingredients inspire our dishes, revealing the remarkable flavours that can be found right on your doorstep.

The Oldstead Foraging Tour with Dinner, Bed & Breakfast is available on select Friday night stays through May & June 2026 and includes:

The Oldstead Foraging Tour is priced from £950 based on two people sharing a room.
