Sea Buckthorn

A bold & complex non-alcoholic spirit, making it the perfect way to relax after a long day. Layers of vibrant Seville orange, a warmth from smooth Mediterranean herbs balanced with the soothing brighter
note from Sea Buckthorn. “These flavours de-stress me at the end of the day” says Rose, “the long finish is like a good quality gin.”

Verbena

It’s time to awaken the senses with this bright, herbal non-alcoholic spirit. A a multilayered drink that acts as the perfect pre-dinner aperitif or refresher on a warm summer’s day.
An uplifting citrus-herbal character leads here, carefully then balanced with a cool menthol note of
fennel & aromatic lemongrass. “This zingy drink makes a perfect aperitif,” says Chris, “I love it’s herbal gin like
qualities.”

Our Story

The story of Bax starts with our founders, Chris the Chef and Rose the plant expert. When they first met, they’d bond over the beauty of the natural world with Rose sharing her knowledge of the plants they’d find whilst out walking. ‘They’re all very pretty, but can I eat them?’ Chris would ask. A little research later, Chris found himself with a whole new cupboard of ingredients to play with in the kitchen. Nature had begun to inspire Chris’ cooking in a whole new way.

Then came time to put down some roots, and the couple bought themselves a woodland, as you do. It was in this woodland that they began running outdoor courses to ‘Taste the Wild’. The courses covered foraging & cooking wild plants, all with the aim of inspiring guests to find a deeper connection with nature.

Rose & Chris would showcase the various ways of harnessing and celebrating the unique flavours of their woodland through both food & drink. It was within these first drinks that the idea for Bax Botanics was born. Many guests would drive to the woodland due to it’s middle-of-nowhere nature, and so the drinks would be inclusively non-alcoholic. A range of shrubs, preserves & eventually what became known as non-alc spirits were served. ‘Can we buy some?’ guests would ask. Well, maybe? But to be made at scale these drinks would have to be ethically sourced, not foraged.

A small still was purchased and the first recipes were tested. Then, in early 2019 Bax Botanics launched with two flavours – Verbena & Sea Buckthorn. Both spirits are made by us, at our Distillery and are intended to do what we’ve always wanted to do, to inspire people to connect with the flavours of nature.
